Nankhatai


Ingredients:

  • 1 cup All Purpose Flour
  • 1/4 cup Semolina (sooji)
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Cardamom Seeds
  • 1/2 cup Unsalted Butter
  • 1/2 cup Sugar
  • Milk as needed to make dough
  • 20-22 Almonds 

Direction:

  • Melt the butter and put it in a bowl, add sugar and mix it well.
  • After that add flour,semolina, baking powder and cardamom seeds, mix it well.
  • After that using small amount of milk make a soft dough.
  • Cover the dough and let it sit for 15-20 minute.
  • Now preheat oven at 350 degree Fahrenheit for 3-4 minutes.
  • Spread the foil on cookie sheet and grease with butter.
  • Divide the dough in 20-22 balls, and flat them with your palm.
  • Place almond on each of them in center.
  • Bake for 15-20 minutes or until it turns golden brown on all sides.


Note: In some oven 350 degree temperature can be too high, and your cookies might burn out. In that case preheat oven at 250 degree Fahrenheit,

Quick Cumin Cookies:



Ingredients:
  • 1 cup All Purpose Flour
  • 1 tablespoon cumin seeds
  • 3 tablespoon oil
  • 1/4 tsp baking soda
  • 1 tablespoon sugar
  • 1/2 cup milk as needed to make smooth dough
  • salt to taste

Direction:
  1.  Mix all the dry ingredients and make smooth dough.
  2.  Grease the baking tray and bake at 250F till it turns golden brown.

Coconut Cookies with chocolate drizzle !!

Ingredients:
  • 1&1/4 cup all purpose flour
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt 
  • 3/4 cup  coconut flakes
  • 1/2 cup Melted Chocolate (optional)
  • Milk as needed to smooth-en dough
Method:
  • Preheat the oven to 250°F for 2-3 mts
  • Beat sugar and butter together until it turns creamy
  • In another bowl sift  the flour, baking powder, baking soda, and salt. 
  • Add the flour mixture and vanilla extract to the creamed mixture mix it well. 
  • After that add coconut flakes and make a smooth dough with the help of milk. 
  • Grease the baking tray and bake it for 8-10 mts until it turns light golden brown. 
  • Once cookies have cooled completely, drizzle with the melted dark chocolate.

Eggless Cookies


Ingredients:



  • 1/3 cup all purpose flour 
  • 1/3 cup sooji
  • 1/2 cup besan
  • Pinch of baking soda
  • 1/4 teaspoon cardamom  powder 
  • 1/2 cup unsalted butter
  • 2/3 cup sugar 
  • sliced almond & pistachio
Method:
  1. Pre heat the oven to 375 Fahrenheit for 2-3 minute.
  2. Let the butter come to the room temperature.
  3. In a bowl, mix the all-purpose flour, besan, sooji, baking soda and ilaichi powder.
  4. Take a another bowl mix butter and sugar with the help of blender and blend for two to three minutes.
  5. Add the flour in the sugar mixture and make smooth dough.
  6. Divide the dough into equal parts make a ball.
  7. Press each ball between your palms light, put few pieces of almonds and pistachios and press them gently.
  8. Bake at 375 degrees for about 8 to 10 minutes or until they are lightly golden brown.
