Aloo Ka Halwa


Ingredients:
  • 3 cup Boiled&mashed Potato
  • 1&1/2 cup Sugar
  • 4 Cardamom (crushed)
  • 1/2 cup Ghee (Clarified butter)
  • Few sliced almonds for garnishing
Direction:
  1. Heat ghee in a non-stick pan, add mashed potato in it.
  2. Use spatula to gently press the mashed potato, then fold the mashed potato over and press again.   Repeat this pressing and folding of the mashed potato  several times.  This will take approximately 35-40 minutes, and will have a sweet, mild aroma when it is cooked.
  3. Continue stirring on medium heat for 35-40 minute or until the halwa starts to leave the side of frying pan.
  4. After that add sugar and crushed cardamom  and mix it well,fry for another 2-3 minute.
  5. Turn off the heat.
  6. Garnish with almonds..

Bhapa Doi


Ingredients:
  • 1/2 cup Yogurt (curd)
  • 1/2 cup Condensed Milk
  • 1 teaspoon Cardamom powder
  • 1 tablespoon sliced almonds& pistachios
  • Few strands of saffron
Direction:
  1. Mix yogurt and condensed milk till there are no lumps.
  2. Add cardamom powder,saffron, almonds&pistachios,mix it well.
  3. Pour the batter in microwave safe bowl and microwave it for 1 minute.
  4. After that pour in the glass and garnish with some almonds&pistachios.
  5. Serve Chilled.

Sandesh


Ingredients:
  • 4 cups Milk
  • 1.5 tablespoon Lemon juice
  • 1/4 cup+2 tablespoon powder sugar
  • 1/4 teaspoon cardamom powder
  • few strands of saffron
  • Sliced pistachios & tutti fruity for garnishing
Direction:
  1. Boil 4 cups of milk in heavy bottom pan, when milk start boiling add lemon juice . Turn off the gas.
  2. Strain the chhenna through a muslin cloth and wash it in cold water so that all the lemon sour is washed out.
  3. Squeeze the chhenna in muslin cloth to remove all the water.
  4. Take the chhenna in the bowl and press the chhenna with your palm for at-least 2-3 minute till its smooth.
  5. Add powder sugar,cardamom powder and saffron into the chhenna and again knead chhenna until  sugar gets completely mixed.
  6. Take pan and cook the chhenna on low heat for 3-4 minute, continuously stirring on low heat until chhenna become a soft dough.
  7. Take out sandesh in plate and again knead it.
  8. Divide the sandesh in equal parts and roll them like a ball.
  9. Garnish with pistachios and tutti fruity.

Mixed Fruit Shrikhand


Ingredients:
  • 4 cups Curd
  • 1 cup Mango Puree
  • 1 cup Grapes-cut into two pieces
  • 1 medium sized Apple
  • 4 medium sized Banana
  • 1/4 cup Tutti fruity
  • 1 cup Powder Sugar
  • 2 tablespoon Cashew-nut chopped
  • 2 tablespoon Raisin
  • 2 teaspoon Cardamom powder
  • 1 teaspoon Saffron
Direction:
  1. Hang the curd in muslin-cloth or kitchen paper towel for about 4-5 hours.
  2. After 4-5 hours take the curd from muslin-cloth in a bowl and add saffron ,cardamom powder and powder sugar mix it well.
  3. Add mango puree, banana,apple,grapes,tutti fruity and nuts mix it well.
  4. Served Chilled and garnish with some pistachios and saffron.

Gajar Ka halwa in Microwave


Ingredients:
  • 2&1/2 cups Grated Carrot
  • 2&1/2 cups Milk
  • 1 tablespoon Ghee
  • 1/4 cup+2 tablespoon  Sugar
  • 1 teaspoon almonds & pistachios (for garnishing)
  • 1 teaspoon Cardamom Powder
  • Few strands of Saffron (optional)
Direction:
  1. Melt ghee in a microwave safe dish for 10 seconds. 
  2. Add grated carrot in it and cover with a lid, fry for 2 minute.
  3. After that add milk in it and cover with a lid and microwave it for 25-30 minute,stirring after every 5 minute or until milk dries up.
  4. Then add sugar,cardamom powder, saffron and cover with a lid microwave for another 5 minute,stirring after every 1 minute. 
  5. Garnish it with sliced almonds and pistachios.
  6. Serve hot or at normal temperature.

Yogurt Fruit Dessert


Ingredients:

  • 4 cup Curd
  • 1 cup Powder Sugar
  • 4 medium sized Banana
  • 1 medium sized Apple
  • 1/2 cup Tutti fruity
  • 2 tablespoon Cashew-nut chopped
  • 2 tablespoon Raisin
  • 2 teaspoon Cardamom powder
  • 3 tablespoon Milk
  • 1 teaspoon Saffron
Direction:

  2. Soak the saffron in milk for 10 minute.
  3. After 4-5 hours take the curd from muslin-cloth in a bowl and add saffron milk,cardamom powder and sugar mix it well.
  4. Add banana,apple,tutti fruity and nuts mix it well.
  5. Served Chilled and garnish with some tutti fruity and pistachioes.


Note:We can use any other seasonal fruit also.

Aloo Dahi Vada


Ingredients:

  • 2 cup Boiled,Mashed Potato
  • 1/2 cup Singhada flour
  • 3 Green chilies Chopped
  • 1 cup cilantro chopped
  • 2-3 tablespoon Raisins
  • 2 cup Curd 
  • Rock Salt as per taste (Sendha Namak)
  • Oil for fry
  • Cumin Powder,Red chili powder for Garnishing

Directions:

  1. Mix mash potato, flour,green chilies,salt,cilantro and raisin and make a dough.
  2. After that take a pan, heat the oil at medium heat.
  3. Take small amount mixture from dough and make a round flat ball.
  4. Deep fry until golden brown.
  5. Stir the curd and put some salt in this.
  6. Dip the vada in the curd, garnish with cumin powder and red chili powder.
  7. Serve Chilled.

Dhaniyan Ki Panjiri

Ingredients:
  • 2 cup Coriander Powder (dhaniya)
  • 1 cup sugar
  • 1 cup ghee
  • 1 cup coconut shredded
  • 3 tablespoon chopped almonds
Directions:
  1. Take a heavy bottom pan, put 3 tablespoon ghee and fry the coconut shredded in for 1-2 minute at low heat. 
  2. Take the fried coconut out from the pan.
  3. In the same pan put remaining ghee and fry coriander powder at low heat until it gives sweet smell. 
  4. After that cool down the mixture.
  5. When its completely cooled down add sugar,fried coconut and almonds.
  6. Mix it well. Garnish with some shredded coconut.
