Eggless Carrot Cake

Ingredients:
  • 1 cup Wheat flour
  • 1&1/2 cup grated Carrot
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Cinnamon powder
  • 1/4 tsp Salt
  • 1/2 cup curd
  • 1/2 cup Oil
  • 1 cup Sugar
  • 1 tsp Vanilla extract
  • 2 tbsp almonds chopped
  • 2-3 tablespoon milk

Direction:
  • Preheat the oven to 350F just 2-3 minute before the batter is ready. To make batter see below steps.
  • Grease the 9 inch heart shape baking tray with oil before making the batter, so that you can immediately put the batter in the tray. We should not keep batter sitting for a long time.
  • Mix the wheat flour, baking powder, baking soda, cinnamon and salt in a bowl. 
  • Add grated carrots and almonds to above mixture and again mix it well.
  • Whisk curd, sugar, oil and vanilla extract together in a separate bowl.
  • Combine the mixture made in step 2 & 3 together.
  • Now our batter is ready. If you feel the batter is too dry, just add 1-2 tablespoon of milk or as needed.
  • Pour this into a already greased baking pan. 
  • Bake it for about 20-25 minutes and keep looking in the oven for the health of cake.
  • Also when you take it out, insert a toothpick in middle of the cake and toothpick should come out clean.
  • If toothpick doesn't come out clean, bake it for few more minutes and keep a eye on it all the time.
  • Take out the cake from oven and rest it for 5 minutes before taking it out from the baking pan
